This free camping spot on the end of one of the old runways in Stephenville is too great to leave. Our solar panels are keeping the batteries charged up even though it’s overcast. The wind kicked in last night and we’ve been watching and listening to the waves all day. The first night here the young RV’er near us turned on his generator at 9:30 and it was still going at 1 am. I think he fell asleep and forgot about it. So we moved 1/2 mile further down the bay and now have been joined by 4 other RV’s. Some fishermen have been repairing a big net on another part of the runway across the road. Towns people come out here to walk, bike ride, and watch when the one flight a day comes in and leaves again. We are just a mile from Wal-Mart and the downtown.

We just finished having homemade chocolate cake. This recipe for two is great when you are having a craving and want something FAST. Here is the recipe for Five Minute Mug Chocolate Cake:
4 TB Flour, 4 TB Sugar, 2 TB Unsweetened Cocoa Powder, 1 Egg, 3 TB Milk, 3 TB Oil, Splash Vanilla, 1 Large Microwave Safe Mug (I actually use a 1 cup Pyrex measuring cup)
Wipe some butter in mug. Add dry ingredients. Mix well. Add the egg and mix thoroughly, then oil and milk and vanilla. Mix again. I use a whisk – no mixer.
Microwave full power for 3 minutes. Cake will rise over top – no problem.
Frosting Melt about 2-3 TB margarine or butter. Whisk in 2 tsp unsweetened cocoa powder. Add powdered sugar until the right consistency. Splash vanilla. Add more sugar or a tiny bit of milk if too thick or thin.
