Those of you who have been following my blog for a few years will remember Tessa. She and I started corresponding in 2009 after I left a comment on her blog when she took her children to Central America in their Lazy Daze RV. Then in the summer of 2010 we took our motorhomes to northeast Canada but with separate itineraries. We first met quite by accident in Nova Scotia and subsequently ran into each other several more times in Newfoundland. Now Tessa and her daughter Lia are in Manitou Springs staying at a campground in our Tulip for three weeks. Needless to say, we are having lots of fun and they have seen many of the tourist attractions in the area with many more coming up.

Tessa is responsible for Steve and I having changed to a totally plant based diet and here she had us over to Tulip for a delicious and so easy to prepare dinner. We had all sorts of veggies, fruits and berries, along with salsa, hummus, and pecan dips, and also quinoa tabouleh. Very tasty, filling, and most of all very nutritious.
